Daiginjo
Daiginjo Taiyozakari
Made using 100% Koshitanrei, a premium sake rice developed in Niigata and polished to the limit of 40%.
This daiginjo is Taiyo Sake Brewery's flagship product, based on our contest sake which has been chosen three times at the Kanto-Shinetsu Sake Awards as the number one Niigata representative sake.
Since the first bottle was sold, the labels as well as the cedar boxes housing the bottles have been numbered consecutively; the names of the customers who bought the sake along with a written record of their thoughts and opinions on it have become a treasured archive of our company to this day.

With its deliberately subdued aroma and palate, Echigoryu is a sake whose best qualities unfold slowly, one sip after another.

Junmai Ginjo
Junmai Ginjo Taiyozakari
This Junmai Ginjo sake is made from locally grown "Takane Nishiki" sake rice, polished nearly to half its original size, and carefully brewed using Niigata Ginjo yeast. It has a moderate fruity aroma, a very soft mouthfeel, the natural umami of the rice, and a smooth, fading aftertaste, all of which create an exquisite harmony.

Tokubetsu Junmai Taiyozakari
This Junmai sake is made primarily from locally grown sake rice "Gohyakumangoku," and is made with a commitment to "Niigata" to bring out the best in the sake rice. While suppressing the negative aspects that are common in Junmai sake, its characteristic acidity tightens the flavor of the sake.

This unpasteurized sake has never been heat-treated, and has a gorgeous aroma both on the nose and in the mouth.
The alcohol content is slightly lower, making it refreshing and easy to drink.
