Daiginjo Taiyozakari
Made using 100% Koshitanrei, a premium sake rice developed in Niigata and polished to the limit of 40%.
This daiginjo is Taiyo Sake Brewery's flagship product, based on our contest sake which has been chosen three times at the Kanto-Shinetsu Sake Awards as the number one Niigata representative sake.
Since the first bottle was sold, the labels as well as the cedar boxes housing the bottles have been numbered consecutively; the names of the customers who bought the sake along with a written record of their thoughts and opinions on it have become a treasured archive of our company to this day.

This Sake is brewed using the rice locally-grown Takanenishiki (including that grown by our Toji, master
brewer) and the yeast developed by Niigata especially for
Ginjo Sake. The modest and elegant fruity aroma, very mild
taste, ‘Umami’ from the rice and smooth aftertaste make an
exquisite harmony. This Sake is recommended to be served
not only as an aperitif but also with various dishes.

A particularly Niigata-style junmai that brings out the best in the locally grown Go Hyaku Man Goku sake rice.

Tokubetsu honjozo Koshi-no Shoro
Brewed with aromatic Niigata Ginjo #9 yeast and carefully selected raw materials. With a name derived from Matsu-no Tsuyu, a sake made by one of the original breweries that merged to form Taiyo Sake Brewery, "Koshi-no Shoro" seeks to preserve the spirit of the sake making culture of the past.

Diligently brewed from rice polished to the same degree as ginjo class, this is Taiyo Sake Brewery's standard sake. With a tanrei flavor followed by a refreshing aftertaste, Kin-noho Taiyozakari serves as a perfect "table sake" for everyday drinking.

Using 100% high quality, large domestic Shirakaga ume (Japanese apricot). In place of the usual shochu, we use our own Tokubetsu Junmaishu as the main ingredient and age it to perfection for one year in our storehouse.
